ALMA by Juan Amador is a food-for-the-soul fine-dining experience.
Executive Chef Haikal Johari has created a second sumptuous instalment of the Wine and Dine series at ALMA by Juan Amador, the restaurant which has been awarded a Michelin Star every year since he arrived.
The five-course dinners, which are paired with wineries from around the world, ignite your palate, tantalise your tastebuds and take you on a gastronomic journey full of flavour and soul.
The special set menu sees chef Johari delve deep into his repertoire to surface with four dishes that continue to push the boundaries of European cuisine and Asian fusion. Each of these is paired with an Italian wine from the historic Avignonesi winery in Montepulciano—the first and oldest certified and guaranteed red wine region in Italy.
For starters, Chef Johari has combined Amaebi Ebi with green apple, Yuzu and foie gras and paired it with a fragrant and floral Toscana Bianco IGT 2014. The second course of the feast is ocean trout served with wild mushroom, pecorino and parsley, which comes accompanied by a tropical yet balanced IL Marzocco Chardonnay DOC 2019.
A dark, ruby red Vino Nobile di Montepulciano from 2016 is paired with oxtail, arborio, chestnut and a poached egg for the night’s third course before diners are treated to Mieral pigeon, beetroot, cherry and coffee. This is served with a bold Desiderio Merlot IGT 2017 to complement the flavours on the plate.
Your enviable night out will then end in conversation drinking the third red wine of the evening, a Grandi Annate Toscana IGT 2015, and picking at an assortment of cheeses.
The Avignonesi winery, founded in 1974, does not use chemical herbicides, pesticides, or fertilizers and as a result, their range of wines boast broader aromas and flavours that not only remain true to the grape varieties of the region but rather amplify their taste profiles even further.
ALMA’s Wine and Dine: Five-Course Dinner with Italian Wine Pairings event takes place on Monday 25 October with seatings every half hour between 6 and 7:30pm.
