Ignite Your Palate With This Michelin-Starred Five-Course Dinner With Wine Pairings

Date night or a date with friends, ALMA by Juan Amador is a fine-dining experience meant to be shared.

Do you want to eat ignite your palate, tantalise your tastebuds and go on a gastronomic journey of flavours from around the world that are thoughtfully paired with delicate, bold and crisp Portuguese wines?

If this sounds like the type of culinary experience you’re looking for after weeks of eating at home, we think we’ve found just the event because Executive Chef Haikal Johari has created a sumptuous five-course dinner that will delight, excite and make your mouth water.

The special set menu, which has also been paired with wines from Casa Santos Lima (one of Portugal’s premier family-owned wineries), sees chef Johari delve deep into his repertoire to surface with four dishes that continue to push the boundaries of European cuisine and has seen the restaurant awarded a Michelin Star every year since he arrived.

For starters, he has combined swordfish ‘Toro’ and served it with cucumber and Shio Koji while the second course unites foie gras with red berries, Gochujang and sour plum. The third sees aged Irish duck plated with beets, mountain yam and a touch of curry. And although the mountain yam returns in the fourth course, this time it is accompanied by a full-blooded Australian Tajima tenderloin, scallion mousseline and a Touriga reduction.

To begin proceedings, however, the experienced in-house sommelier has thoughtfully chosen a dry yet somewhat fruity 2017 Viosinho from the south of Portugal. Other wines paired with each dish include a citrussy Verdelho 2018, a dark ruby red Alicante Bouschet 2013 as well as a bold Touriga Franca 2015 and a Quid Pro Quo Reserva Tinto that coats your palate with oak, vanilla and chocolate.

Your night will then end in conversation, drinking a Quinta de Porrais Tinto 2015 and picking at an assortment of cheeses, which to us sounds like an enviable night out.
