California Republic launched in April in Singapore by The Dandy Collection, who concepted the likes of Firangi Superstar and one of our favourite group dining restaurants, Neon Pigeon. These folks are known for sending diners on an adventure rather than just treating them to a meal.
THE SPACE
Located at Amoy Street in a refurbished shophouse, 65-seater California Republic boasts four retro rooms blending pop culture and counterculture. Featuring funky décor, private leather boots, wooden walls, vintage Hollywood posters and ornaments like atomic clocks and sputnik lamps…you’ll feel transported to a 1960s California.
The tunes of the era will be booming as you dine on delicious Southern Californian and Italian cuisine. The extensive menu features an array of seafood, handmade pastas, small platters, pizzas and plenty more.
THE FOOD
Menu highlights include pork and veal Meatballs Al Angelino ($28) topped with creamy tomato sauce, mains such as ribeye Pork Milanese ($42) and Smoked Bucatini ($34) pasta. Meanwhile, pizza lovers can enjoy The Daily Pizza Set ($38) at lunch with a San Francilian style pizza, salad, soup and gelato.
The Raw Bar offers plenty of cold and hot seafood options. Think Jumbo Tiger Prawns ($35) from New Zealand, Grilled Oysters ($22) with Hog Island chipotle bourbon butter or opt for a tower such as Beverly Hills Tower ($188) consisting of 12 oysters, dozens of clams, chilled prawns, crab legs and more.
Compliment your meal by pairing it with a refreshing cocktail. Each concoction is made full of booze, without alcohol or just a little. For example, Dankelicious ($18), Lemon Haze ($21) and zero-proof Dreamin ($18).
