Synthesis is a creative new bar and restaurant, hidden behind an unsuspecting TCM-inspired storefront, at Tower 4 in Suntec City. If you are one of few who hasn’t seen it pop up on your Instagram or TikTok feed yet…we visited this quirky new dining concept in March, and here’s what you can expect from it.
Concepted by the folks behind one of the most instagrammable bars in Singapore, Mama Diam – you know you’ll be treated to something impressive from the moment you arrive. Synthesis is hidden amongst the hustle and bustle of Suntec City, behind a dark oak storefront resembling a traditional Chinese medicine shop.
The exterior features rustic wooden shelves, glass jars filled with apothecary and red lids, as well as oriental herbs that appeal to the senses the moment you arrive. Meanwhile, the storefront showcases a mix of modernism but also preserves heritage and old traditions.
Founder Sebastian Ang brought us through the sliding door that blends into the oak storefront, which then reveals a sleek, neon-lit alleyway, boasting lanterns, leading into the chic speakeasy. And, the alley has already become a superb new location for instagrammable selfies.
Once you’ve reached the secret speakeasy, it feels more like you’re stepping into a club rather than a place to dine – which is another reason Synthesis stands out from the crowd. Inside discover a mix of private booths, and high or low dining tables – each decked out with a gold metal lamp. Certainly, the perfect place for a date or group dinner, because the music and crowd doesn’t overshadow with noise.
If you’ve a good eye for detail, you’ll have no trouble spotting the TCM-style designs, with the five elements evident of wood, fire, earth, metal and water inside the sleek and luxurious space.
The menu at Synthesis Bar features a large selection of Asian Fusion dishes, many of which are an elevation of local favourites, close to the hearts of many Singaporeans, but with a clever twist created by head chef Ezekiel Tan and team.
From shared platters, to mains such as pastas, and starters and desserts…there’s plenty for every type of diner to enjoy. Plus, many dishes can be made to be gluten-free, vegan-friendly and vegetarian.
For cold plates, we tried the Laksa Prawn Tartare ($22), which is a bizarre-but-brilliant pairing of prawn tarte, pringles and homemade Laksa ice cream. Yes, you heard that correctly. Grab your potato chip, scoop some prawn tarte and then add some ice cream. At first, you’ll just taste the richness of gelato, but as it goes down your throat, the taste of cold laksa is actually delicious. While my colleague enjoyed the Pani Puri Assam Curry ($22), with cured Atlantis Salmon and lemongrass cream.
And if you thought they couldn’t be any more unconventional, wait until you hear about our main course. We shared the Australian Wagyu Beef Striploin ($38), which was tender and drooling in homemade mash and white pepper sauce, alongside the Burnt Butter Cauliflower Steak ($24).
But my personal favourite was the hearty Sakura Chicken Herbal Poached Rice ($24), which came with delicious chicken, umani rice, puffed rice, egg floss, herb fritters, and herbal pork collagen broth was added from an oriental teapot before we dived into it. Additionally, we tasted the Truffle Carbonara ($30) which features wild mushrooms and yam abacus seeds mixed together in a creamy sauce.
Another showstopper was the desserts. Sebastian stated the introduction of rare ice cream is probably his favourite on the menu because its a first in all his restaurants. We tried the Rainbow Bread Sandwich ($6) which consists of the familiar rainbow bread, but it comes toasted, with a choice of herbal peppermint or honey osmathus ice cream. While the 3 Faces Of Coconut ($22) is perfect for those who love the taste of coconut jelly, mixed with salted gula melaka sauce.
Excitingly, the drinks menu at Synthesis reflects the TCM concept which adds to the sensory experience. Pair your nourishing meal with a choice of TCM-inspired cocktails or local-inspired cocktails. From cognac-infused and Jia Jia herbal tea Date With Jia Jia ($24), to Giam Sng Tee Highball ($22) with sour plum vodka, and Basilicious Kaya ($24), with white rum, coconut custard, basil and clarified milk, to name a few unique cocktails of choice.
Plus, there’s wines, whiskies, champagnes, coffees and more energetic beverages if you don’t fancy a cocktail at Synthesis Bar. Did we forget to mention Happy Hour is between 4pm to 6pm daily?
Definitely, Synthesis Bar and Restaurant is the perfect place to eat, drink and be entertained in Singapore this season.
