The Chocolaterie de L’Opéra high tea brings together the brilliant minds of the hotel’s Executive Pastry Chef, Jason Goh, and Global Pastry World Champion 2022 and World Gelato Winner 2026, Dexter Lee, to deliver a refined culinary journey that explores the versatility and complexity of chocolate. Standout creations include the Jamaya 73% Travel Cake, which pairs rich chocolate mud cake with Umehara candied orange and a velvety ganache, and the Spinto 70% Dark Chocolate Mousse, featuring a blend of dark chocolate mousse and Morello cherry confit.
Additionally, guests can enjoy the silky Tannea 43% Milk Couverture Tart with apricot confit, the Arcato 66% Chocolate Hazelnut French Choux, and a refreshing Bourbon Vanilla Panna Cotta with Mango Passion Jelly to balance the rich flavours.
